Cupcakes! In cups!

These are quite tasty, I made them from scratch. Its yellow cake with butter cream frosting and a chocolate glaze made with simi-sweet chocolate chips.

The icing was a new recipe I hadn’t used much, but I wanted a softer frosting for this project. The frosting calls for 1/3 cup of butter 4 & 1/2 cups of powdered sugar (sifted works better) and a dash of vanilla, and I added a bit more water. Not very complex.

I made the glaze with a handful of chocolate chips, a bit o’ butter, and some milk and a little water. pop it in the microwave for about a minute (it helps to stop and stir half way) then mix it a lot to make sure you don’t have any unsightly lumps, you shouldnt have to heat it any more.

I used my #12 tip to put the frosting on, but you can use whatever. I would suggest putting the frosting on after it’s in the glass, so you don’t muck up the sides. Drizzle the glaze on, and I topped my cupcakes with mint leaves from my garden, but you can use other things, I think next time I might look into cherries. 🙂

 I had lots of fun making these, I messed up a few and let the family eat them….which is my there are only three now. Haha
